White tea belongs to the very rare group of green teas and is named for its white leaves. The greatest strength of white tea is in preventing various diseases, and in this area it is unique. White tea comes from the same plant (Camellia sinensis) as black and green tea, but it is the least processed and thus retains the most nutrients and the least caffeine.

White teas are actually a very rare type of green tea and are named for their white leaves. They are white because of the short white hairs on the leaves. During processing, the leaves are dried and fermentation is very minimal. White tea is known as the elixir of longevity and beauty.

The drink made from white teas is pale, richer in antioxidants than green tea, contains the least caffeine, and has a subtle taste.

White tea is only harvested for a few days in the distant Chinese province of Fujian, and one of the finest white teas is Silver Needle, named for the silver fuzz that covers the buds for harvesting, which whiten when the tea is dried. It is consumed for preventative health as it strengthens the immune system and has positive effects on the human body.

It is rich in antioxidants, like green tea it should be brewed in water not boiled water at 80 degree celsius. White tea should be stored in a dry place in an airtight container or even in the refrigerator. Cooling improves the taste of the tea and extends its shelf life.

Ingredients: White tea, leaf (Camellia sinensis, folium)

Preparation method: Pour 1 teaspoon of tea with 2 dcl of hot water (70-80⁰C) and leave it covered for 1-2 minutes. Then strain and sweeten as desired.

Storage method: Store in a dry and dark place at a temperature of 25⁰C.
